I’m thankful that Emma has a wonderful Daddy. It was great to have a weekend just to focus on our probably much taken for granted, and a bit underappreciated Dads (and frankly just men in general!). We rarely admit it, but I think it isn’t until our men are sick, injured, or traveling that we truly realize not only just how much they do around the house (!!), but also what a void they leave when they aren’t at home. Ice cream and a chick flick is only fun for one, maybe two evenings and then that kind of bummer feeling sets in. Loneliness for the companionship that our dear hubbies and best friends bring to our lives.
We celebrated Father’s Day on Saturday at Steph and Dave’s house and Sun at the Colyar’s. It was a really sweet weekend. At the Fevergeon household we had the classic BBQ’d Ribs and chicken wings with potato salad, cole slaw, cornbread muffins, and a fruit crisp for dessert. It was a wonderful time together without any of the funny stuff that can be present sometimes at family gatherings. We spent the night on Sat with the Colyars since their house is on our way back from Ellensburg and enjoyed some great conversation around the counter Sat night. I love those impromptu conversations that usually happen late at night. Our church is going through a big transition right now with church leadership, so it’s always interesting to get their thoughts on these things.
Now that we’ve had our fun weekend food, I decided to jumpstart the week with a balanced high-fiber meal that would help me get back into the dinner routine. I bought some Thai Red Curry Sauce at Trader Joe’s and decided to give it a try. So, I sautéed cauliflower, broccoli, and red and green pepper, cooked some whole wheat fusilli, and simmered it all up in the Curry Sauce with some shredded roast beef (the kind you can get canned at Costco by the canned white chicken). It was really tasty! Steve loved it, which surprised me. It wasn’t too strong, but had a delicious spicy ginger flavor that paired perfectly with the roast beef! We had a little mozzarella grated on the top and some red grapes on the side.



This evening Emma found some stickers on the floor and began sticking them all over her body. We found her with little heart stickers pasted up and down her legs and all over her baby doll.
