Ginger Molasses Cookies
Mix:
1 cup white sugar
1 cup brown sugar
1 ½ cups vegetable oil
2 eggs
Blend in:
½ cup molasses
In separate bowl combine:
4 cups of flour
1 tsp salt
4 tsp baking soda
2 tsp ginger
2 tsp cinnamon
1 tsp nutmeg
Combine dry with moist. Scoop dough out with 1/8 or 1/4 cup. Roll in sugar and pat down on pan. Bake at 350 for 10-12 depending on the size. Makes 3 dozen. (The cookie dough shouldn’t be wet or oily, so if it is, add more flour until it feels like regular moldable cookie dough.)
Today was the first day I made them. While they were soft, chewy, and fabulous, in the future I’d like to try swapping out some of the oil for applesauce and the white flour for whole wheat pastry flour. I think they would be just as good and better for you!
