Homemade Pizza How-To

At our house a perfect Friday night isn’t complete without pizza and a movie. My standby recipe for homemade pizza dough is from the July 2009 issue of Cooking Light. Here is the link:  Homemade Pizza Dough. I use it for pizza and calzones and it comes out soooooo delicious every time!!!

When you double up the heart-healthy sauce, minimize the processed meats–pepperoni, Canadian bacon–and fatty cheeses), and pile on lots of fresh veggies you have a delicious and healthy weekly dinner. Sometimes I rotate between calzones and pizza on Fridays, but I try my best to do one of the two, because Steve and Emma love pizza too!!

Here is how I make it:

Start by mixing up your dough (a kitchen aid makes this super quick and easy!!)…

Next, grease and lightly flour your pizza pan and stretch the dough out evenly to fit the pan. I let this pizza dough rise for 10-20 mins before I cook it because it gets much fluffier that way–which I like!! I spoon sauce liberally over the whole circle.

Now I add shredded part-skim mozzarella cheese (yum!)…and I just realized that tiny Emma fingers were sneaking some dough while I took this picture (ha-ha, that’s hilarious!!!)

 Now for a little pepperoni for salty goodness and flavor!!

Onto the veggies…red peppers, onion, broccoli…

On a side note—oh my goodness, it’s gorgeous outside!! A great backdrop for cooking…

I double the recipe above and split it into 4 equal parts, then freeze them for future dinners…one mess and four dinners–that’s the way to go!!
