I don’t know about you, but come lunchtime a salad just never really sounds too appealing. Maybe it’s the whole idea of eating your “dark leafy greens” or perhaps it’s that when hunger strikes, I don’t feel like whipping out the cutting board, five kinds of veggies, and some kind of protein to sizzle up to go on top of all the greenery, and so I always end up turning to whatever I can slap together or quickly reheat in the microwave (e.g., leftover spaghetti, a quick sandwich, etc.). However, I also know that because I’m really not an egg white omelet breakfast kind of girl and am more the cereal and fruit, muffin and coffee kind, I need a better lunch that will balance out my starchy breakfast, up my veggie count, and round out my meals for the day. Basically, I have realized that if salad is going to become the star of my lunch, I had better start getting more creative.
